Form and functionality of the new ergonomic handle patented by Paderno, along with a perfect state-of-the-art handle/blade balance enable effortless cutting and utmost safety. Flawless cut, lightness, handiness, hygiene and reliability are the winning features of Paderno's cutlery. The stainless steel composition, composed by a percentage of carbon steel, in order to give strength to the blade, and by a percentage of Chromium, in order to guarantee a high stainlessness, along with the high accuracy thermal treatment are two factors that determine the product's quality. A deep study and computerised tests of ergonomics, movement and posture have allowed Paderno to create a professional knives line that is the synthesis of comfort and cutting precision. Handle realised in POM, an inert plastic material with high resistancy and natural anti-slip qualities, with stainless steel inserts and integrated Paderno logo in the oval at the extremity. The professional cutlery line "Color-Line" helps to reduce the risk of cross contamination using a Color Coding System which identifies each knife with a specific task; different food processing areas are easily identified. The steel used for this cutlery has exceptional hardness and very high resistance to corrosion due to ICE-HARDENED system, a special process to harden the steel. |
The TRIDENT Logo - synonymous with form, function and uncompromising quality - was registered with the Berlin Patent Office in 1895. Today, the Trident logo is registered and protected in moust countries and recognised the world over as a proud symbol of quality. Throughout its history, WÜSTHOF has focussed almost solely on on the manufacturing of forged knives for the professional chef and home cooking enthusiast. A considerable number of separate manufacturing steps are required to complete each precision forged knife. Each step along the way is perfored to exacting standards by skilled workers aided by the most modern, computer-guided equipment and powerful robots. That is how each WÜSTHOF knife is created, known the world over for its unique, uncompromising quality.

Wüsthof Ikon Knives are a newly developed and designed line (their 7th) for 2007. All knives of the series are precision forged from a single blank of high-carbon no-stain steel. The first big improvement is they offer a tapered bolster. The bolster is meant to protect your finger from the blade edge, but the problem with most bolsters is they tend to get in the way of sharpening. After years of sharpening, the bolster sticks out beyond the blade and is both unsightly and makes it difficult to chop with the blade flat on the cutting board. A tapered bolster allows for easy use and sharpening and all kitchen knives should have them.
Next, the handle design has been updated and improved. It offers a nice ergonomic black resin handle with 3 rivets which feels good in the hand and also is well balanced. Overall the fit and finish of these knives is excellent.

All knives of the CLASSIC series are precision forged from a single blank of high-carbon no-stain steel. Traditional skills and the latest robotronics continue the grinding and polishing operations till the final cutting edge is applied at the most appropriate blade angle.

Wüsthof Trident Gourmet Knives are produced with the same care and using the same steel as is used in all of the precision-forged product lines. The difference is that these knives have stamped blades instead of forged. The Gourmet line are lighter and less expensive than the Classic forged line. The blades of our GOURMET Series are laser-cut for precision and consistent quality.
